Bio Mare Mio mussels are harvested in the Nieddittas hatchery located in the Gulf of Oristano , in the open sea. Drilled and packaged inside vacuum-packed bags, they are subjected to the cooking cycle in the convection steam oven which guarantees the maintenance of their intervalve liquid, essential for maintaining the flavor of the freshly harvested product.
Once the cooking cycle is finished, they are immediately cooled and frozen.
