Baldo is a variety of Italian rice that belongs to the japonica subspecies. It is a recently developed type, from the lower Vercelli district, dervied from Arborio. It is made of large robust grains with good absorption. It withstands cooking very well and is particularly suitable for risotto and boiled rice with condiment or baked race. It also gives excellent results in salads.
